Egg Puff




Ingredients:

Puff Pastry Sheet (ready made- available in frozen section), 1
Eggs, 4 nos 
Oil, 1 tablespoon
Cumin seeds, 1/4 teaspoon
Onion, 1 no.
Curry leaves, 1 sprig
Ginger garlic paste, 1 1/2 teaspoon
Cumin powder, 1/2 teaspoon
Turmeric powder, 1/4 teaspoon
Coriander powder, 1 teaspoon
Chilli powder, 1 teaspoon 
Salt, as required

Method:
  1. Thaw the frozen pastry sheet as per the instructions given in the package.
  2. Boil the eggs, remove the shells and slice it into two and keep it aside. 
  3. In a skillet, heat oil, add cumin seeds, then curry leaves and fry for a minute. Then add chopped onions and fry till the onions turn translucent
  4. Then add the ginger garlic paste, turmeric powder, cumin powder, chilli powder and coriander powder and fry for another 2 minutes or till the raw smell is gone. 
  5. Add the required salt, mix and add the sliced eggs and gently mix well and turn off the heat.
  6. Cut the pastry sheets into 9 squares or according to the size you require. 
  7. Take each roll and slightly roll it.
  8. Then place the masala/spicy onion filling and then egg on top of it. 
  9. Pull the sides together. Then the other sides together such that the egg is covered with pastry sheets. Then seal the ends together. 
  10. Preheat the oven for 400 F. 
  11. Arrange the prepared puffs on the baking sheet and brush oil on top of the puff pastry  and bake for 15-18 minutes.
  12. Remove from the oven and serve it warm with tea.

Aloo Egg Bhurji


Ingredients:

2 eggs
150 g potatoes
2 medium onions, finely chopped
3 tablespoons oil
1/2 teaspoon corriander powder
1/4 teaspoon ground turmeric
salt
25 g green chilies
1/2 tea spoon garam masala

Method:
  1. Fry the onions in the oil for 4 minutes (over high heat) and add the potatoes cut into small pieces, together with the salt, turmeric and coriander powder.
  2. Cook until the potatoes are tender then add green chillies.
  3. Break the eggs into a bowl, beat well and season to taste with salt.
  4. Pour them over the potato onion mixture and cook till the egg is light brown in colour.
  5. Add further salt to taste if required and serve them with hot rotis.

Kodiguddu Mullakada Kura / Egg Drumstick Curry

Ingredients:

3 boiled eggs, make small slits lengthwise along the egg
1 drumstick, cut into 2 inch pieces
2 onions, finely chopped
1 large tomato, finely chopped
1 tsp red chilli pwd (adjust)
1/2 tsp coriander pwd
salt to taste
coriander leaves for garnish
1/2 tbsp oil
1/2 tsp mustard seeds
1/2 tsp jeera
14-15 fresh curry leaves

Method:
  1.  Drizzle oil in a cooking vessel, once hot and roast the boiled eggs on medium heat, tossing them for 1-2 mts. Sprinkle a pinch of turmeric pwd and toss again. Remove and keep aside.
  2. In the same vessel, add some oil and add mustard seeds, jeera and curry leaves Once they start spluttering add onions
  3. Saute the onions till they turn transparent. Add the chilli pwd, coriander pwd and salt, combine.
  4. Now add the chopped tomatoes and drumstick pieces and cook for 2-3 mts, combining them often, on medium heat.
  5. Add the boiled and roasted eggs and combine. Cook on low heat covered for two minutes.
  6. Add two cups of water, increase heat and bring to a boil. Reduce heat to medium and cook covered till it forms a thickish gravy, approx 10-12 mts.
  7. Garnish with fresh coriander leaves and serve with hot steamed rice.

kodiguddu Enduroyyala Kura / Egg and Dry prawns Curry

Ingredients:

Eggs - 2
Endu Reyallu (Sun Dried Prawns) = 20 no
Salt to taste
Oil = 2 tbsp
Chilli Powder = 1/2 tsp (Adjust as per taste)
Dhaniya Powder = 1 tsp
Onions = 2 big (Chopped)
Ginger Garlic Paste = 2 tsp
Turmeric Powder = Big Pinch

Method: 
  1. Remove the head and tail from the dried prawns,if it has not been removed.
  2. Wash the dried prawns thoroughly and soak in water for half an hour.Drain the water.
  3. Boil the eggs and remove the shell and slit along the sides.
  4. Heat oil in a pan,once it's warm add chopped onions and saute till transparent,then add ginger garlic paste fry for 2 minutes.
  5. Now add turmeric powder,salt , Chilly powder and mix well and  add  dried prawns and cook for 8 to 10 mins,on medium heat.Stirring once in a while.
  6. Add the eggs in the curry and add water.
  7. Cook till the water is evaporated and serve with hot rice.

Kodi Guddu Beerakaaya Kura


Ingredients:

250 gms ridge gourd, peeled and chopped
4 boiled eggs, make 3 slits along the sides
1 large onion, finely chopped
1/2 tbsp oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 dry red chillis, de-seed and tear
2-3 green chillis, slit length wise
4-5 garlic flakes, slightly crushed
12-15 fresh curry leaves
big pinch turmeric pwd
salt to taste
3/4 cup low-fat milk

Method:

1  Drizzle half a tsp of oil in a vessel, add pinch of turmeric pwd, add the slit boiled eggs, roast them for a mt, remove and keep aside.
2  In the same vessel add the remaining oil. Add the mustard seeds, let them splutter, next add the cumin seeds and let them turn slightly brown. Add the crushed garlic, dry red chillis, curry leaves, green chillis and combine.
3  Add the chopped onions and saute till transparent. Add the chopped ridge gourd and combine. Cook for 8-10 mts on low to medium heat, stirring once in a while. You will find it leaves water, let it cook in its water.
4  Add salt and cook for another 4-5 mts on medium flame. Add the milk and increase flame and go on stirring while it cooks and you get the curry consistency. This should take about approx 8-10 mts.
5  Reduce flame, add the boiled eggs, place a lid and simmer for 5 mts. Turn off heat and serve hot with rotis or white rice.

Sliced Egg Curry


Ingredients :

Boiled Eggs - 5
Onions - 2
Green chillies - 3
Garlic cloves - 2
Ginger - small piece
Red chilli powder - 1 tbl spoon
Salt - to taste
Corainder Powder - 1 tbl spoon
Garam masala - 1/4 tbl psoon
Corainder Leaves - 1 bunch

Method:

  1. Take Pan add oil and heat it. Now add onion pieces and fry it.
  2. Add red chilli powder, garam masala, corainder powder, salt and fry for 2mins. Now add half glass of water.
  3. When masala gets cooked well add coriander leaves(cut it into small pieces).
  4. Then slit boiled eggs.
  5. Mix well and fry for 2mins.

Simple Egg Roast


Ingredients:

Eggs - 3
Salt - pinch
Turmeric - pinch
Pepper powder - pinch
Chat masala - pinch
Oil - 2 tsps

Method:

Halve 3 boiled eggs. Drizzle 2 tsps oil in a pan, add a pinch of turmeric pwd,  Place the halved boiled eggs, cut-side down, cook on low flame for 3 mts. Turn over and cook for another mt. Add salt, pepper powder and chat masala on it and cook it well Turn off heat. Serve warm.

EGG BHURJI

Egg Bhurji is one of my favoraite dish.....This is the dish i prepared for first time in cooking at the age of 16 yrs and the curry was burnt and didnt come out well as i cooked it in high flame.....and i first made my brother to taste it......he joined his hands and told "ninu evadu chesukuntado kani..vadi pani anthe".........sounds funny rit.........but now iam expert in this dish..and all my family members loves this dish....
now after a short story...here is the recipe

INGREDIENTS:-

Eggs - 3
Onions - 2 medium sized finely chopped
Oil- 2 tbsp
Green chillies - 1 or 2 coarsly chopped
Salt as required
Turmeric powder- a pinch
Red chilly powder- 1 tsp

Ginger garlic paste - 1 tsp
Garam masala- 1/2 tsp
Mustard seeds-1tbsp
Jeera - 1/2 tsp


METHOD:-

  1. Heat oil and add mustard seeds and jeera and let them splutter.
  2. Now add the finely chopped onions and green chillies salt and turmeric and fry till onions becomes translucent.
  3. Add red chilli powder and garam masala ,ginger garlic paste and fry for another 2-3 min till a nice aroma is released.
  4. Add the eggs and keep stirring till the whole onions mixture is coated by the eggs and fry till done

Omlett


This may sound silly..seeing omelet in a blog...this is my heart favorate ...when i was a kid this is my favorate breakfast and my snack after the school. I learned it when i was in high school and got excellently .
I think each person has his/her own recipe for omelet. This is the very basic one. Some people add tomatoes, coriander leaves to it

Ingredients:-

Egg - 1
Onion (cut into small pieces) - 1 tbl spn
Green chillies(cut into small rounds) - 2 or chilli powder - ½ tea spn
Tomato(cut into small pieces)(optional) - 1 tbl spn
Oil/ghee - ½ tea spn
Salt - as required


Method: -
  1. Mix onion , tomato, chillies (or chilli powder), chopped coriander and salt and mix well.
  2. Now add the egg to it and mix well with spoon.
  3. Heat tava. Apply oil or ghee to it.
  4. Pour the egg mixture on tava. Lift the tava and tilt it sideways to spread the mixture on tava.
  5. Reduce the flame and fry it from both sides.
